Baked Pasta with Sausage and Peppers

I love baked ziti, and I love sausage and peppers. This recipe combines the best of both worlds. I had been browsing several recipes on marthastewart.com and combined elements of a few of them for this dish. For reference, I used Jennie-O turkey sausage and Classico Spicy Tomato and Basil sauce. Ryan also enjoyed it though I noticed he did pick around the pepper slices. Any recipe that I’m excited to reheat for leftovers the next day gets five stars.

Baked Pasta with Sausage and Peppers

1 pound uncooked pasta
3 links lean Hot Italian turkey sausage
½ medium onion, chopped
1 medium green bell pepper, chopped
2 cups marinara sauce
8 ounces part-skim mozzarella cheese, shredded

Preheat oven to 350.

Cook pasta according to package directions, omitting fat. Drain.

Remove casings from sausage; crumble. Brown over medium heat with pepper and onion slices.

Combine pasta, tomato sauce, 1/2 of mozzarella, and sausage in a large bowl. Spoon into a baking dish; sprinkle with remaining cheese.

Bake at 350 for 20 minutes or until cheese is lightly browned. Let stand 5 minutes before serving.
