Parmesan Roasted Potatoes

Roasted potatoes are a staple in my apartment. They are a nice substitute for french fries, which Ryan would prefer to eat with everything. I’ve done them many different ways, and when I saw this recipe, I just had to try them. I added a little bit of dried basil to the original recipe just to give it a bit more flavor, and they turned out lovely. They took a bit longer than the recipe calls for, but I also couldn’t find “small” potatoes so I settled on several large white potatoes. They were cheesy and delicious without the parmesan overpowering the flavor of the potato. Four stars from me, five from Ryan.

Parmesan Roasted Potatoes

7 white potatoes
4 tablespoons parmesan cheese, grated
1 tablespoon olive oil
garlic powder, to taste
salt and pepper, to taste
1 teaspoon dried basil

Preheat oven to 350 degrees. Boil a large pot of water and boil the potatoes for 4-5 minutes. Remove from water and let cool. Once cooled, slice into quarters and combine with olive oil, garlic powder, sea salt and black pepper as well as the Parmesan. Mix thoroughly and place in a baking dish that has been sprayed with olive oil cooking spray.

Place into the oven and roast for 20-25 minutes. Remove from the oven and taste, re season with sea salt, cracked pepper, or garlic powder if needed. Garnish with fresh chopped parsley. Enjoy.
