Maple-Roasted Sweet Potatoes

Prior to this, I think I’ve only eaten sweet potatoes one other time. I guess I prefer savory vegetables to sweet ones, but I’ve been reading about how great sweet potatoes are and thought I should give them another try. I don’t think I’m a die-hard convert, but I will definitely experiment with them some more.

This recipe was really easy to make and paired well with the spicy Jamaican salmon I posted yesterday. They were a little too soft and overcooked at 45 minutes, but otherwise I really liked this recipe. Ryan enjoyed them quite a bit as well and gave them four stars.

Maple-Roasted Sweet Potatoes

2 large sweet potatoes, cut into 1 1/2-inch pieces
⅓ cup maple syrup
2 tablespoons light butter, melted
1 tablespoon lemon juice
½ teaspoon table salt
¼ teaspoon black pepper

1. Preheat oven to 400F.
2. Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
3. Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45 to 50 minutes more.
