Chipotle Chicken Taco Salad

There is a salad at Chick-Fil-A, the southwest salad, that I just adore. I don’t usually add dressing to it because it comes with this black bean/corn salsa that is already tossed with their spicy dressing. Sometimes it could benefit from more dressing, but said spicy dressing is not light or figure friendly at all. Personally, I just don’t enjoy salad enough to spend the same amount of calories/fat that I could get something better (read: a cheeseburger) with. I could pretty much eat the Chick-Fil-A salad every day, but it’s a little pricey. Luckily, now that I’ve tried this Chipotle Chicken Taco Salad, I have found a more than adequate substitution!

I browned a couple chicken breasts, seasoned with creole seasoning and pepper, in a skillet a couple days ago to have on hand for lunches. I whipped up the dressing and used a bag of pre-chopped lettuce to make this one of the quickest, easiest lunches ever. The original recipe called for salt, which I forgot. At first I thought the dressing needed a little salt, but it wasn’t sorely missed. A full tablespoon of chili powder was also called for, but I was concerned about how spicy that would be so I only used half. My best recommendation is to season to your tastes – you can always add more pepper later! I love spicy foods and have a high tolerance but will say this salad was incredibly spicy and not for people who prefer mild foods. Delicious! Four stars… it probably could have been five, but, honestly, I just can’t give a salad five stars! :)

Chipotle Chicken Taco Salad

⅔ cup light sour cream
1 tablespoon chipotle pepper in adobo sauce, minced
1 teaspoon ground cumin
½ teaspoon chili powder
4 teaspoons lime juice
4 cups romaine lettuce, chopped
1 chicken breast, cooked and sliced
½ cup canned black beans
½ cup canned corn with peppers

To prepare dressing, combine first 6 ingredients, stirring well.

To prepare salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat. Serve immediately.
